as overly sweet.  This is because the wine has some tannins and acidity which the sugar balances really well with.  This balance reduces the perception of the sweetness and the tannins.  This effect gives body and structure to the wine, which gives the sensation of a higher alcohol wine vs the moderately low 8%.  This is more noticeable if the wine is not over chilled.\u003c\/p\u003e\n\u003cp\u003eLambrusco is pretty temperature sensitive in our opinion.  Too cold and it tastes quite light and looses some of its nuances.  Too warm and it becomes too acidic and elevates the tannins.   This wine is a little more forgiving than others, so straight out of the fridge should be fine, although after 5 minutes would be better in our opinion - but as taste is
